🌍 Ancient Beginnings – Persia (7th Century) 


Historians trace the first cookies back to Persia, where sugar was first widely cultivated. Bakers made tiny, spiced “test cakes” to check oven temperatures. They were practical… but also so tasty that people started making them on purpose. 


 


🚢 The Spread of Sweetness – Middle Ages 


As sugar spread through Europe via trade routes, so did cookies. By the Middle Ages, cookies had taken on regional personalities: 


Germany: Lebkuchen (gingerbread) 


Italy: Biscotti (hard, dunkable treats) 


France: Macarons (delicate almond bites) 


Cookies became travel-friendly too—easy to carry on long journeys (medieval meal prep, if you will). 


 


🍪 The New World Arrival – 1600s 


European settlers brought cookies to America. Dutch immigrants called them koekjes (“little cakes”), which later became “cookies.” (South Africans still call them koekies, so really, we’re keeping it old-school.)

Fast forward to 1938: Ruth Wakefield invents the chocolate chip cookie by accident at the Toll House Inn. Nestlé jumps on board, chocolate chips are born, and the world never looks back.
